With a newborn there is practically no time, and I mean NO TIME! I’m pretty lucky my husband learned how to cook on his own when he was a bachelor so he still does most of the kitchen duties now.
My husband does a lot of the everyday cooking and I’ve always done the more elaborate meals. For some reason I’ve always done the things that make a mess of the kitchen, involve tons of ingredients, lots of seasonings of plenty of cooking time. (They typically involved making a mess of the kitchen and tons of time to clean that up too!)
However, having the little one around has led to me cutting down on the more extravagant recipes in the kitchen and to getting imaginative with whipping some things up pretty quickly. Basically, out of necessity when you’re craving a treat but don’t have the luxury or putting down your little one you get creative.
My Lazy Cook’s Recipe has just 4 ingredients (5 if you count a small side dish) and only microwave needed! It’s a totally goofy recipe, but an absolutely delicious and filling treat!
- Slice of Bread (I recommend a fresh, crusty italian loaf)
- Peanut Butter
- Melting Chocolate
- Powdered Sugar
The simple instructions are
1. Spread peanut butter on the bread
2. Sprinkle lightly with powdered sugar
3. Melt chocolate. Typically 30 seconds on medium power, stir, and repeat one more time does the trick.
4. Drizzle the bread with the chocolate.
THAT IS IT! Totally easy, but it tastes soooooo good! You can get a filling, sweet treat in just minutes and not have to mess with a bunch of mixing bowls or wait for the oven.
An optional idea is to add some chocolate covered berries, or some jam on the bread as well to give a fruity, tart kick!
